Truffles: A Culinary Delicacy
When it comes to culinary delicacies the truffle is on a level all its own, and for those who love and appreciate good food, it’s one that’s not to be missed. White truffles, available October through December, are the rarest and most expensive. They are typically shaved fresh over warm food so their delicate aroma can be released. Black truffles, available in January and February, are often used when cooking sauces, terrines, meats, seafood and many other types of dishes, which allow the intense flavors and aromas to permeate the food.
Chef Juan Urbieta will create 3-4 special chef’s menus during white truffle season (late October through late December) and another 2-3 menus during black truffle season (early January through mid February.) Reservations: 414.771.7910
