A bold new European-inspired steakhouse concept set to debut in downtown Milwaukee
MILWAUKEE – The Bartolotta Restaurants, the premier restaurant and catering group in the Greater Milwaukee area, is expanding its award-winning dining portfolio with the introduction of High Stakes by Bartolotta, a sophisticated and distinctive new European-inspired steakhouse experience opening in Summer of 2026. High Stakes by Bartolotta will occupy the space at 1030 North Water Street, ushering in a bold new chapter for the iconic location.

This newest venture continues the creative partnership between The Bartolotta Restaurants and acclaimed designer Jay Franke of Jay Franke Design. Franke most recently led the Wisconsin-inspired design of The Commodore – A Bartolotta Restaurant, which opened in summer 2024 on the shores of Nagawicka Lake, and earned a nomination for the 21st Annual Hospitality Design Project Awards in 2025. For High Stakes by Bartolotta, the interiors draw from the glamour of London lounges and private social clubs, interpreted through a richly layered aesthetic influenced by the elegance of 1930s Art Deco.
High Stakes by Bartolotta also draws inspiration from Chef Bartolotta’s tenure in Las Vegas, where he led his highly acclaimed namesake restaurant at Wynn Las Vegas. It was during this period that Chef Bartolotta was awarded his second James Beard Award, Best Chef: Southwest (2009). With a cosmopolitan atmosphere, refined menu, whimsical details, and signature Bartolotta hospitality, High Stakes by Bartolotta is poised to bring a fresh perspective to Milwaukee’s fine dining scene. The restaurant will also feature the Peacock Lounge, a thoughtfully curated destination for exceptional cocktails, light bites, lively music, and socializing before, during, and after dinner.Beyond creating an exciting dining destination, High Stakes by Bartolotta underscores The Bartolotta Restaurants’ ongoing commitment to Milwaukee’s continued growth.
