As the year 2003 begins, I wish to again thank all of our loyal supporters of the Bartolotta restaurants. It is a very rewarding feeling when a company presents a product and is so thoroughly and overwhelmingly supported by its customers. We will continue to respond to the needs and palates of our guests in the greater Milwaukee area. We are looking forward to an exciting 2003 and are planning, as always, a few new surprises for the Milwaukee dining scene.

The first and most current will be the opening of Pizzeria Piccola. Located next to Ristorante Bartolotta in the village of Wauwatosa, Pizzeria Piccola will be a casual-dining restaurant that focuses on truly authentic thin-crust Neapolitan pizzas, baked in a rustic wood-burning oven. My goal is to recapture the fragrance and taste of the many pizzerias where I have dined on my trips to Italy. As with most things Italian, the tendency is to take great liberties with Italian cooking, and many things are lost in the translation. Our goal is to properly and correctly reproduce the wonderful thin-crust pizzas of Italy.

Each pizza will be made to order, starting with a ball of dough that is rolled out by hand and lightly topped with sauce and fresh, traditional ingredients. The pizzas are then slid into a 400° oven and, moments later, are ready to be savored. In addition to our authentic pizzas, we will be offering hearty Tuscan soups, salads, and paninis, the wonderful sandwiches of Italy. We will also feature a beverage menu consisting of Italian beers and some simple, yet remarkable, Italian wines.

Walking into Pizzeria Piccola will take you back to the old country, with its cream-colored lace curtains, warm wood interiors, and friendly service. As you enter the room, you'll be dazzled by our open-flame, wood-burning oven, and your mouth will begin to water as the aromas of fresh basil and garlic waft through the air. With its cozy, forty-seat dining room located on the second level, Pizzeria Piccola is the perfect place for a quick, casual bite for lunch or dinner. You can also order ahead and take out your meal, or simply grab a slice and a beverage as you stroll through the quaint village of Wauwatosa.

Pizzeria Piccola is scheduled to open in mid-April. I am very excited to offer this traditional version of pizza to Milwaukee diners and hope to see you soon!
